What is the Guiding Star Gourmet?

My name is Ume Nashmeira. I am an aspiring educator, who now calls Sharlayan home. Be it deep in the wilds, or tucked neatly in a city, the Guiding Star Gourmet seeks to deliver you not just wonderful meals, but to spread the gift of knowledge to all.Our menu changes to reflect wherever we may be. My primary goal is to learn how culture has affected the food we eat every day, and what we may learn from something we might otherwise take for granted. As is the case I would ask one simple favor from you. As I expect many of those who visit my stall may be travelers from near or far, I would greatly appreciate if you would share stories or recipes of food from your past. Even something so simple as recalling a loaf of bread would help me immensely.I would accept gil of course, but knowledge is my pursuit. You give me a story, and I will give you food!A good deal, wouldn't you say?~

Spaghetti Pescatore

Seafood? From Ul'dah?! As a trading hub for Eorzea, Ul'dah has many such culinary secrets. Many might dig for nuggets of gold, but the nuggets of wisdom found in the glittering streets can help us learn even more. While pasta is a dish enjoyed across the star, the Spaghetti Pescatore that is so famous among the wealthy of Ul'dah has but a more humble origin. The fishers who lived among the southern coasts would sell their stock, only to be left with a meager supply for themselves. Lobster alone would make for a fine meal, but pack in squid and mussels, then you have a meal reborn!Spaghetti Pescatore is made with long, thin vermicelli noodles with tomato sauce, lobster, mussels, and squid. Cheese optional.

Battered Fish (and Popoto Chips)

Battered fish, chopped popotoes. A classic meal, common perhaps for anyone who lived in Limsa Lominsa. Delicious as it may be, who decided to put a fish of all things in oil? That honor is often reserved for frying dough! Their origins are not too far removed from one another, as a matter of fact. Deep frying food is a common way to extend how long it will keep, and given the many seafarers who make their livings out of Limsa Lominsa, it is not shocking to learn that frying salt cured fish is an excellent way to stave off hunger! But what of our humble sliced popotoes? These have but a simple explanation, and are rather new in the culinary sense. Ketenramm the Blue prepared this very dish nearly 80 years ago, slicing the curious crop into "chips" before frying them as well.Battered Fish (and Chips) is deep fried fresh caught haddock, and thinly sliced popoto chips. They are served generously salted, and drizzled in vinegar (if requested).

Ratatouille

Many lament Gridania, calling its culinary habits 'weak' or 'flavourless'. Hah! I've had Archon Loaf, those who deride Gridania clearly have not come to realize the unique and hardy culture they hail from. Ratatouille is one of those dishes that speaks to the indomitable spirit of those who live among the Shroud. Originally this dish was thought to be or Coerthan Origin, but that could not be further from the truth. According to an old post-Gelmorran manuscript, Ratatouille was made to avoid the Greenwrath, using only carefully cultivated crops, spices, and and sauces. A perfect display of living harmoniously with nature.Ratatouille is made with thinly sliced eggplants, zucchini, tomato, stewed in a mun-tuy bean and lavender oil based sauce.

Almond Cream Croissant

What an interesting piece of history the Coissant holds for Coerthas. Before snow and ice blanketed the land, before the days where war waged ceaselessly between man and dragon... these fluffy pastries were here! But why did they come to be? Who made them first? Sadly they are a mystery, but we do have some clues to learn from! Croissants take time to make, sometimes stretching into days depending on how many you are making. And most recipes for them are found on the shelves of those who serve as culinarians for the Ishgardian nobility. My guess is that the croissant is a long standing, traditional good made for the nobility.Almond Cream Croissants are a hand baked puff pastry, filled with almond cream, drizzled in birch syrup, and then dusted with sliced almonds and powdered sugar.

Buckler Stew

How could something so seemingly simple have such a complicated history? Ala Mhigo might struggle to remember this, but all the same its history is a rich one. During the Autumn War, Ala Mhigan soldiers would use their shields as pots, on account of not having proper cookware. Meat, wine, and other spices were tossed into the shield and stewed. While this already sounds like an interesting dish, its reach goes far beyond. Passed on through traders, the recipe for Buckler Stew wound up crossing to Thavnair, and from Thavnair to Doma. Those who hail from the Far East may know this dish by another name "Sukiyaki". Though the ingredients are different, and the taste may be more hearty, the wisdom of this meal has passed not just borders, but has spread across cultures.Buckler Stew is made by stewing grizzly bear meat in a red wine sauce, along with carrots, and popotoes, along with Gyr Abanian spices.

Have you ever been to Camp Bronze Lake? I have, a number of my times when I was a soldier. An enjoyable stop on the road. even if it may be a little out of the way. The wine served here is said to cure your ailments, but personally? I think its the perfect way to rest and relax.Warmwine is a Vintage 1547 Bacchus wine, served warm with cinnamon, orange, cherries, and honey mixed in.

Fermented Mun Tuy Juice

Mun Tuy beans. A staple of Gridania. They last long, and their juice tastes sweet. A little fermentation of course, and you have something even better! Never let a Lominsa say they can outdrink anyone. Especially when a Gridanian may be nearby...Fermented Mun Tuy Juice is made from Mun Tuy beans. It may smell a little.

Mulled Tea

The signature dish of the Quicksand in Ul'dah. Miss Momodi has been a true saint to me, as I would have never been able to get where I am without her and the Adventurers guild.Mulled tea is made with traditional Thanalan tea leaves, ginger, honey, and cloves.

Lomo Saltado

Perhaps you've met the Pelupelu? These short men and women are avid traders, something I have learned we have in common. I quite appreciate their company too! In spirit of their widespread trade, Lomo Saltado is may be called the very peak of the Pelupelu's reach! From the stories I have heard, the recipe came to be when the Pelupelu traded cooking tips with a Doman. Despite being on opposing corners of our star, this marriage of cultures is sure to inspire!Lomo Saltado is stir fried alpaca meat, steeped in sauces inspired by those found commonly in Doma, along with red onions, peppers, and scallions. A hearty and healthy meal for all those that need one.

Anticuchos de Corazón

The humble skewer. A common travel food, excellent for a people on the move and out and about. Some like their meat salted, spiced, and flavorful. Others like it to last long, deciding to dry it so they may enjoy it whenever they wish. Though you might find that these skewers are a recipe of the Yok Huy, not the Pelupelu! Indeed this recipie, and many like it were made to last long distances and be eaten while on long marches. The main ingredient? The heart! These tender skewers are not so much suited for long travel but will indeed be good for wandering about and eating.Anticuchos de Corazón is made from alpaca heart, marinated in a spicy sauce and served on a skewer.

Rocoto Relleno

Stuffed peppers, a classic dish. But of course... opening a vegetable, only to see it makes the perfect vessel for stuffing in meat and other tantalizing goodies. The history of this dish dates back less than 100 years ago, to when the Dawnservant freed the Pelupelu from Yok Huy subjugation. The peppers used in this dish only grow above a certain elevation. As an offering of peace, the Yok Huy traded these peppers with the Pelupelu, a vegetable they had never seen before. Upon opening them, they filled them with many ingredients, until finally they decided that ground alpaca meat was the best choice!Rocoto Relleno is made from hollowed out spicy peppers, stuffed with alpaca meat, alpaca cheese, onion, and corn.

Picarones

Who doesn't love doughnuts? Across our star do we see them! Fried dough, with so many topping your mouth may water at the thought... well here we have one of the many Turali created doughnuts! The history on the creations of Picarones is murky at best, as it seems every person has the desire to toss dough into a boiling vat of oil just to see what happens. And it is indeed genius!Picarones are made with pumpkin, sweet popoto, flour, then fried. They are served drizzled in a rich dark chocolate syrup.

Alfajores

The humble cookie. A simple treat, one you're sure to remember from your childhood. These tasty treats were originally made with a pineapple preserve, are now filled with dulce de leche. These crumbly shortbread cookies are held together with a wonderfully sweet and soft center! These cookies are made differently all across Yok Tural, with some being made with corn flour or meringue.Alfajores are a cookie sandwich made by spreading dulce de leche between two shortbread cookies, and sprinkled with powder sugar.

Mate Tea

The quintessential crop of the Pelupelu, and what an energizing brew it is! One of these cups is sure to keep you awake for bells to come! This tea is often carried by the Pelupelu on long journeys, as the perfect way to break camp and ready themselves for a long day of travel.Mate tea is a bitter tea, with a high caffeine content.

Tuliyollal Sunset

A little original Ume creation! This drink is made from the locally produced mezcal, a fascinating drink to be sure. Indeed, the history of mezcal comes from beyond Urqopacha! The origins of this drink seems to be in Shaaloani, though I still have more research to do there...Tuliyollal Sunset is a cocktail consisting of mezcal, ginger, grenadine, lemon, and lime juice.
